Simple Taco Casserole





Ingredients:
2 pounds chicken breast or tenderloin
1 16oz can refried beans
1 16oz can red beans
1 16oz can corn (drained)
2 cup shredded cheddar cheese
1 cup salsa
1 cup chopped tomatoes
1 cup sour cream
1 package taco seasoning. 

  • Cook your chicken in a pan and cook according to package directions. You want your chicken just barely cooked because we will be placing it back in the oven.
  • While your chicken is cooking place the refried breans, red beans, corn, salsa, 1 cup of shredded cheese and half of your taco seasoning in a pan. Heat on a stove and mix until the cheese is completely melted.
  • Once your chicken is cooked take it out of the oven and make sure your oven is set to 350*
  • Spread your bean mixture evenly over your chicken. 
  • Sprinkle the remaining cheese over your bean mixture.
  • Mix your your remaining taco seasoning with  the sour cream and spread on top of the cheese.
  • Place your dish back in the oven for another 20-30 minutes or until heated through.
  • Once your dish is cooked top with chopped tomatoes and serve.
